Business After Hours
Business After Hours are run by the Chamber and hosted by a different Chamber Member every month. These events provide members with a valuable networking opportunity in an informal setting and give the host a chance to showcase their product and service to fellow members who, in turn, become a powerful marketing force via word of mouth.
Being a Co-op it is owned by its members who are all independent licensed fishermen. The Co-op provides seafood to the shire via its retail shop, and nationally/internationally via the Sydney Fish Market. The organisation donates over $35,000 annually to local community groups such as Ballina Marine Rescue, the Surf Life Saving Jet Boat, local schools, sporting clubs and multiple charities like Lions and Rotary. They are also a proud major sponsor of the Ballina Prawn festival.
The co-op members operate a fleet of trawlers, who supply cooked and green Prawns, Octopus, Cuttle-fish, Balmain bugs and some species of fish including Whiting and Blue -spotted Flathead. There is also a fleet of Shark Cats (a type of boat) who supply the bulk of their Snapper, Yellow Fin Tuna, Mackerel, Jewfish, Cod species and Spanner Crabs. The estuary fishermen obtain their supply from the river and beaches, including Bream, Luderick, Mullet, Pilchards, Whiting, School prawns, Pipis and Mud crab.
A BBQ cooking demonstration was set up at this exciting Business After Hours event, to showcase how fresh seafood is prepared including:
- Chermoula marinated local green king prawn skewers
- Fish and chip cones, with the whole process line on display
- Filleting the fish, cutting and crumbing the fish, cooking the fish and serving
- King prawn, lime and chive crème fraiche crostini
- Crumbed calamari with Aioli

The Ballina Prawn Festival
The 2016 Ballina Prawn Festival was a huge success with people coming from far and wide to celebrate a wonderful day of fun, laughter, community and the beautiful Ballina Coast and Hinterland.
Festival goers from far and wide flocked to Missingham Park last to enjoy a jam packed day of fun and entertainment from the DIY Raft Building and River Races, the Ballina Fishermens Co-op Boat Parade, the FSG Sandcastle Building Competition and Seedling Planting Activity, Kids Klub activities and face painting, circus performances and workshops, animal shows, and the awesome Macadamia Castle Fiery Fireworks Spectacular.
The new Ferris Wheel was well loved by all along with a bigger choice of amusement rides than ever before including crowd favourite, the Macadamia Castle Train. Fair Go Skate Comp had a record breaking number of registrations and despite the rainfall in the early afternoon the comp was a huge success. Simon Doe’s cover of Howie Hughes’ Prawn Festival song was just one of many highlights coming out of the line-up of live music featuring Broadfoot, The Young Murphies, Mitch King, Kav Temperley from Eskimo Joe, and, of course, local favourite, Marshall O’Kell who took the roof off the After Party. Bare Nature Furniture really made the Beer Garden the place to be with their incredible display of rustic furniture and TAFE’s Events & Hospitality students did a fantastic job running the bar operations. Our wonderful community volunteers- you are the bomb. Your collective contribution is invaluable and we really could not do it without you! Prawn Shelling Comp
The hilarious Ballina Co-op Prawn Shelling Competition was taken out by reigning champion Russel Coombs who, maintaining his title for the second year in a row, managed to neatly consume 500 grams of prawns (and some of his fellow competitors) in 1 minute 14 seconds.
Signature Prawn Dish
The huge array of delicious food was a festival highlight with all manner of Prawn Dishes available including; Fresh Prawns, Prawn Dumplings, Prawn Curry, Prawn Paella, BBQ Prawns, Prawn Tempura, Prawn Pizza, Paleo Coconut Fried Prawns, Prawn Pies and more!! The esteemed judging panel from Sydney Fish Markets and the Ballina Fishermens Co-op chose Macadamia Castle’s Ballina Prawns with Macadamia Satay Sauce as the 2016 Signature Prawn Dish winner! YUMMO.
